Redcurrants with Yogurt - Fit for a Royal

This is a less known, easy to make dessert that deserves be more popular, the taste is wonderful! It's a typical summer time pudding with not only redcurrants and yogurt but some sherry and ratafia/macaroon/amaretti biscuits and sugar to make a naughty refreshing treat. Here is what you will need in detail:

3/4 lb (375g) Redcurrants
2 Tablespoons of sherry
3 oz (75g) Sugar
2 oz (50g) Ratafia bisuits
1/2 pint (300ml) Natural yogurt

Chilling time: 30 minutes

  1. First strip the currants from their stems and rinse. Put two thirds of the currants in a bowl with the sherry and sugar and stir until all of the sugar has dissolved.
  2. Then crush the ratafia biscuits to coars crumbs with a rolling pin (or spade) and mix lightly in with the redcurrants and juice into the yogurt. 
  3. Simply place the mixture into 4 serving bowls or glasses and chill in a refrigerator for 30 minutes
What we have finished already! That was super quick to make but get ready for the taste!

How to Make a Lovely Gooseberry Trifle

Good morning!
I have so many gooseberries at home, both red and green and they are really sweet as they are huge and juicy, but I don't mind picking the smaller ones for a kick! They are really easy to grow and need little attention between pruning. Here is a delicious recipe for you to make and is very tasty!

Ingredients:
1 lb (500g) Green gooseberries
3 oz (75g) Sugar
3-4 sponge trifle cakes
3 tablespoons ginger wine
1/2 a pint (300ml) Custard sauce
5fl.oz (150ml) Whipping cream
Garnish: Gooseberry jelly or crystallized ginger

Cooking time: 15 minutes
Chilling time: 1 hour

  • First don't top and tail the goosberries, instead rinse them and put them in a pan and bring the water to the boil over a gentle heat. Combine the sugar in the mix and simmer until they're soft and puply. This should take about 12-15 minutes.
  • Get a sieve and rub the gooseberries through and set the puree to one side to cool.
  • Whilst the puree is cooling cut the sponge trifle cakes in half lengthways and place themover the base of a serving bowl/dish. Then sprinkle the ginger wine over and leave it until the sponge has soaked it all up.
  • Make a thick custard sauce make sure you keep it warm, place the gooseberry puree over the sponge and pour the custard on top and leave to chill in a refrigetator.
  • Just before serving spread the whipped cream over the trifle and decorate with the gooseberry jelly or crystallized ginger. 
Personally I prefer the ginger to add a bit of spice into the trifle but here is what it looks like:

How to make your own Strawberry and Banana Smoothie

There is nothing better than a fresh smoothie on a hot summers day to cool you down. This is both optional to read and watch a video on the method. I have the perfect recipe for you to make your own so here is what you need to get started:
  • Blender
  • 15 medium strawberries
  • a banana
  • 4 cups of plain yogurt
  • a splash of milk
  • Spoon
  • Mixing Bowl
  • Measuring Jug
  • Knife
  • Chopping board
  • (optional) Honey
  1. First remove the leafy green top of the strawberries and cut them all in half
  2. Slice up the banana.
  3. Add them and the 4 cups of plain yogurt into a mixing bowl, a splash of milk and a couple of   generous teaspoons of honey.
  4. Then blend the mixture together until there are no bits left.
  5. Place in the fridge for 30 minutes to cool and serve with a strawberry and mint leaf on top.
