3/4 lb (375g) Redcurrants
2 Tablespoons of sherry
3 oz (75g) Sugar
2 oz (50g) Ratafia bisuits
1/2 pint (300ml) Natural yogurt
Chilling time: 30 minutes
- First strip the currants from their stems and rinse. Put two thirds of the currants in a bowl with the sherry and sugar and stir until all of the sugar has dissolved.
- Then crush the ratafia biscuits to coars crumbs with a rolling pin (or spade) and mix lightly in with the redcurrants and juice into the yogurt.
- Simply place the mixture into 4 serving bowls or glasses and chill in a refrigerator for 30 minutes
